Pink Lemonade Cookies 1 cup sugar ¼ butter, softened 1 egg 2 teaspoons freshly grated lemon peel 1 teaspoon lemon juice 1 to 2 drops red food color 1 cup all-purpose flour ½ teaspoon baking powder ¼ teaspoon salt Powdered sugar, if desired Directions Heat oven to 400 degrees. Combine ½ cup sugar, butter, egg, lemon peel, lemon juice and red food color in large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour, baking powder and salt. Beat until well mixed. Cover; refrigerate until firm (1 hour). Shape dough into ½-inch balls; roll in remaining sugar.
